Ultimate Southwestern Burgers Recipe | Chef Bryan Woolley

Ingredients

For the Burgers: 3 pounds lean ground hamburger
2 tbsp steak seasoning
2 tbsp finely minced garlic
1/4 cup finely minced onion
Hamburger buns of choice
Sliced Cheese of choice
For the Pico de Gallo: 6 roma tomatoes, diced
1 large red onion, diced
1 green bell pepper, diced
2 tbsp minced garlic
1 bunch cilantro, chopped
Juice from 2 limes
2-3 tbsp Southwestern Seasoning blend
For the Guacamole: 6-8 ripe avocados
1 cup prepared pico de gallo
Juice of one lime
Southwestern seasoning to taste

Instructions

Preheat oven to 400 degrees.

In a large bowl, mix together the ground hamburger, steak seasoning, minced garlic, and onions until combined.

Form patties to your desired size. With 3 pounds of meat, you can make about 10 burgers.

Place a cooling rack into a baking sheet, spray with vegetable spray, and arrange the formed patties onto the rack. Use multiple racks or prepare in batches.

Par bake the patties for about 10 minutes in the oven. Remove and transfer to a large platter. These burgers can be made days in advance or placed in freezer bags and frozen at this point.

When ready to serve, grill the prepared burgers for about 3-4 minutes on each side or until fully cooked through.

To make the pico de gallo, combine all the diced tomatoes, red onion, green bell pepper, minced garlic, chopped cilantro, lime juice, and Southwestern seasoning in a large bowl. Season to taste and set aside.

For the guacamole, remove the avocado flesh and transfer to a large bowl, smashing it together. Add the cup of fresh pico de gallo to the avocado and mix together to combine. Season to taste and add the juice of one lime to prevent browning.

After grilling the burgers, grill the buns and build your hamburger with fresh guacamole, lettuce, cheese, and any other toppings you desire.
