Ingredients

1 pound hard salami, sliced and julienned
2 cups pizza sauce
32 ounces ricotta cheese
2-3 cups shredded mozzarella cheese
Salt and pepper, to taste

Instructions

Preheat your oven and pizza stone to 500°F (260°C).

Divide the dough into four equal portions and roll each portion into an 8-9 inch round.

In a bowl, season the ricotta cheese with salt and pepper to taste. Spread the seasoned ricotta cheese evenly onto one side of each dough round.

Divide the julienned salami and shredded mozzarella cheese among the four rounds, placing them on top of the ricotta cheese.

Fold the other side of the dough over the filling, creating a half-moon shape. Press the edges together to seal the calzones.

Brush a thin layer of pizza sauce on top of each calzone and cut a small steam vent on the top of each one.

Transfer the calzones to your pizza stone or a baking sheet and bake until they are golden brown and fully cooked, about 15-20 minutes.
