Ingredients

2 tablespoons olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
2 cups chopped cabbage
4 tomatoes, diced
2 cans (15 oz each) cannellini beans, undrained
2 cans (15 oz each) butter beans, undrained
6 cups vegetable broth
Salt and pepper to taste
2 cups chopped kale or spinach
Grated Parmesan cheese for serving
Crusty bread or your favorite rolls for dipping

Instructions

In a large pot, heat olive oil over medium heat. Add diced onion, carrots, celery, garlic, and chopped cabbage. Sauté until the vegetables are softened, about 5-7 minutes.
