Ingredients

For the “Meat”: 2 packages extra firm tofu, drained and patted dry
1 tablespoon cumin
2 teaspoons chili powder
1 tablespoon paprika
2 tablespoons soy sauce
1 tablespoon olive oil
2 teaspoons salt
For the Sauce: 1 small onion, diced
3 cloves garlic, minced
2 teaspoons cumin
1 teaspoon chili powder
2 teaspoons paprika
1 small can tomato paste
1 1/2 cups water
2 teaspoons salt
For the Green Salsa: 6-7 tomatillos, husk removed
1 jalapeño
2 roma tomatoes
1/2 large white onion
1 bunch cilantro
1 tablespoon minced garlic
1 tablespoon cumin
1 teaspoon chili powder
Salt to taste

Instructions

Preheat your oven to 350 degrees Fahrenheit.

Begin by draining and patting dry the tofu, then crumble it into a large bowl.

Sprinkle the crumbled tofu with cumin, chili powder, paprika, soy sauce, olive oil, and salt. Mix well to combine.

Spread the seasoned tofu on a baking sheet and bake for 30-45 minutes or until dried out.

While the tofu is baking, prepare the sauce. In a large frying pan, sauté the diced onion and minced garlic in olive oil until softened.

Add cumin, chili powder, paprika, and tomato paste to the pan (I like to add a couple of tbsps of Worcestershire sauce too), stirring to coat the onions and garlic.

Pour in water (can use pineapple juice too) and mix to create the sauce. Bring to a boil, then simmer for a few minutes.

Once the tofu is ready, add it to the sauce, stirring to combine. Set aside.

For the green salsa, char the tomatillos, jalapeño, tomatoes, and onion in a large pan. Transfer them to a blender along with cilantro, minced garlic, cumin, chili powder, and salt. Blend until smooth, adjusting seasoning as needed.

To assemble your tacos, fill each tortilla with the tofu “meat”, shredded cabbage, cheese, and a drizzle of the freshly made tomatillo salsa. Customize with your favorite toppings and enjoy the fiesta of flavors!
