Ingredients

6-8 cups cooked pasta, your choice
1 package bacon, cooked and chopped
1 cup chopped ham
1 small red bell pepper, chopped
1 small red onion, diced
1 small package frozen corn
1 small package frozen peas
3 celery stalks, chopped
1 bunch green onions, chopped
1 bunch cilantro, chopped
2 cups chopped cabbage
2-3 tbsp Tajin seasoning
1 cup crumbled Mexican cheese
Salt and pepper to taste

Instructions

Boil pasta according to package instructions, then drain and set aside.

In a skillet, cook bacon until crispy, then chop into pieces.

In a large bowl, combine the cooked pasta, chopped bacon, chopped ham, red bell pepper, red onion, frozen corn, frozen peas, celery, green onions, cilantro, chopped cabbage, Tajin seasoning, and crumbled Mexican cheese. Gently fold everything together until well combined.

In a separate bowl, prepare the dressing by combining mayonnaise, sour cream with chives, fresh lemon juice, sugar, salt, and pepper. Mix until smooth.
