Tomato Bisque with Grilled Cheese Sandwiches

Tomato Bisque with Grilled Cheese

Delicious and easy to make, this tomato bisque is a crowd pleaser! I like to serve a simple grilled cheese on the side to finish off this perfect lunch or dinner!

Ingredients

1 small onion, diced
4 celery stalk, chopped
1/4 cup Jasmine rice
1 tbsp minced garlic
1 large can diced tomatoes (30 ounces approx)
1/2 cup heavy cream
4 cups chicken stock
1 tsp paprika
1 tsp black pepper
1/2 tsp cayenne pepper or to taste
2 tsp sugar
1/3 cup finely sliced basil leaves, garnish
Salt and pepper to taste
Olive oil

Instructions

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the diced onion, celery stalk, jasmine rice and minced garlic to the pot.

Sauté everything together for a couple of minutes until very fragrant.

Add the can of diced tomatoes (juice and all) along with the cream, chicken stalk, paprika, black pepper, cayenne pepper and sugar. Mix everything together to combine. Simmer the soup together for about 15 minutes or until the celery and rice are tender.

Using an immersion blender, puree the tomato bisque together until smooth and creamy.

Serve each bowl with a drizzle of cream and finely sliced basil on top. I like to serve a grilled cheese sandwich on the side.
