Ingredients

1 pork loin (5-6 pounds)
1/2 cup sweet vermouth
1 cup diced apple
6 cups sliced mushrooms
2 cups cream
1 cup chicken stock
6 cups prepared rice pilaf
Freshly chopped parsley
Salt and pepper to taste
Butter and Olive oil for cooking

Instructions

Begin by slicing the pork loin into 2-inch thick medallions, then season with salt and pepper to enhance the flavors.

Heat a large sauté pan on the stove and add 4 tablespoons of butter along with a drizzle of olive oil.

Once the butter has melted, carefully pan-sear the pork medallions for three minutes on each side and about 1 minute on the upright sides, ensuring they reach an internal temperature of approximately 138 degrees Fahrenheit. Remove from the pan, cover with foil, and let rest until the carry-over temperature reaches 145 degrees Fahrenheit.

In another sauté pan, melt a stick of butter and add the sliced mushrooms, sautéing until they release their liquid and turn golden brown. Set aside.

Pour the cream into a separate sauté pan and allow it to reduce by half.

Deglaze the pork pan with sweet vermouth, then add the sautéed mushrooms and reduced cream. Bring the mixture to a gentle simmer for a couple of minutes, then incorporate the chicken stock and simmer for an additional 4-5 minutes. Season with salt and pepper to taste.

Serve the succulent pork medallions alongside a generous serving of rice pilaf, and drizzle the luxurious creamy mushroom sauce over the top. Garnish with freshly chopped parsley for a burst of freshness.
