Spudtastic Morning Muffins

Start your day the Spudtastic way with this delicious and easy-to-make morning muffin recipe! These golden, cheesy muffins are not just any breakfast treat; they’re a culinary masterpiece crafted by the renowned Chef Bryan Woolley. Dive into the mouthwatering blend of crispy bacon, tender Green Giant Golden Potatoes, and savory cheese, all wrapped in a fluffy egg embrace. This recipe is your ticket to a scrumptious morning that’ll have you leaping out of bed.

Ingredients

6-8 large Green Giant Golden Potatoes
1 large onion, diced
1 pound of crispy bacon
2 cups of shredded cheese
A dozen eggs (but feel free to use more if you desire)
Salt and pepper to taste

Instructions

1
Begin by washing and placing the Green Giant Golden Potatoes into a large pot. Cover them with cold water and allow them to boil until they're tender enough to be pierced with a fork. Once done, remove, drain, and set them aside to cool.
2
While the potatoes cool, preheat your oven to a toasty 350 degrees, ensuring it's ready for your culinary masterpiece.
3
Liberally spray a muffin tin with cooking spray, ensuring nothing sticks, and set it aside, ready for your Spudtastic creation.
4
Now, cut those perfectly cooked potatoes into pieces that can easily fit into the bottom of your muffin tin. Using the back of a glass, gently smash the potatoes down to create the base of your muffins.
5
Sprinkle a generous helping of cheese, diced onions, crispy bacon, and an egg or two on top of each potato base. Don't forget to season with a pinch of salt and a dash of pepper to give your muffins that extra flavor kick.
6
Slide your muffin tin into the 350-degree oven and let these beauties bake until the eggs are cooked to perfection.
7
As the delightful aroma fills your kitchen, remove your Spudtastic Morning Muffins from the oven and allow them to cool slightly.
8
Now, it's time to enjoy your masterpiece. Gently remove your muffins from the tin and savor the flavor-packed experience. These muffins are not just breakfast; they're a culinary adventure in the morning.
