Shrimp Scampi with Homemade Pasta

Shrimp Scampi with Homemade Pasta

This delicious shrimp scampi dish with homemade pasta is a wonderful idea for dinner! I like to make a quick celery green salad to serve with it.

Ingredients

For the Pasta: 1 3/4 cups flour
1 large egg
1/3 cup water
1 tbsp Italian tomato paste
1 tsp season salt
For the Shrimp Scampi: 1 pound shrimp (about 20 shrimp), shell removed and deveined
1 tbsp minced garlic
1/4 cup finely chopped onion
4 tbsp butter
4 tbsp olive oil

Instructions

To make the pasta, place everything in the bowl of your food processor and mix together until combined.

Remove the pasta from the food processor and let the dough rest for about 30 minutes.

Roll the pasta out very thin and cut into the size of noodle you want.

Boil the pasta in a large pot of salted water for about 4-5 minutes or until the pasta is tender to the bite (al dente). Remove and drain the pasta, set aside.

Heat a large frying pan on the stove and add the butter and olive oil. Melt the butter and gently stir it with the olive oil. Add the minced garlic and finely chopped onion. Sauté for about 2-3 minutes or until very fragrant. Be careful not to burn the garlic.

Add the prepared shrimp to the frying pan and sauté until fully cooked.

Add the cooked pasta to the pan with the shrimp and carefully sauté everything together.

Serve the shrimp scampi with homemade pasta and freshly grated parmesan cheese sprinkled on top. Salt and pepper to taste. Serve with your favorite sides.
