Ingredients

1 Pork roast (4-5 pounds)
2 tbsp taco seasoning or to taste
2 cups chicken stock
8-10 fresh tomatoes
1 jalapeño pepper
1 bunch cilantro
1 small onion
2 tbsp minced garlic
2-3 tbsp taco seasoning or to taste
1 cup mayonnaise
1 cup sour cream
2 chipotle peppers
1 tbsp adobo sauce
1/2 bunch cilantro
1 tbsp minced garlic
1-2 tbsp taco seasoning
Corn or flour tortillas
Shredded cheese
Shredded lettuce
Tortilla Chips

Instructions

Place the pork roast into your pressure cooker, sprinkle with taco seasoning and add the chicken stock. Pressure cook for 90 minutes, allow to release pressure naturally. Remove and check for tenderness, adjust cooking times as needed.

To make the blended salsa, add fresh tomatoes, jalapeño pepper, cilantro, small onion and minced garlic and taco seasoning to your blender. Blend until everything is combined, taste and adjust seasoning as desired.

To make the creamy sauce, in a small blender combine the mayonnaise, sour cream chipotle peppers, adobo sauce, 1/2 bunch cilantro, minced garlic and taco seasoning. Blend until well blended. Taste and adjust seasoning as needed.

To make the tacos, place some shredded pork roast, shredded cheese, shredded lettuce, salsa of choice and enjoy.
