Ingredients

1 medium onion, diced
1-2 tbsp minced garlic
1 bunch asparagus, chopped
1 pound shrimp, de-shelled, de-veined
4 cups chicken stock
1 cup grated parmesan cheese
1/2 cup heavy cream
Olive oil

Instructions

Heat a large sauté pan on the stove and lightly coat the bottom with olive oil.

Sauté the diced onion and minced garlic until fragrant, then add the chopped asparagus and shrimp. Cook until shrimp is fully cooked, seasoning with salt and pepper as desired. Set aside.

In another large sauté pan, add olive oil to coat the bottom and fry the Arborio rice for a couple of minutes, stirring occasionally.

Gradually add 1/2 cup of chicken stock at a time to the rice, stirring until absorbed.

Continue adding chicken stock and stirring until all stock is absorbed, and the rice is creamy and tender.

Stir in the grated parmesan cheese and heavy cream until the cheese is melted and the mixture is smooth.

Fold in the shrimp mixture, ensuring it's evenly distributed.
