Ingredients

1 cup orzo pasta
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
Juice of 1 lemon
Salt and pepper to taste

Instructions

Cook the orzo pasta according to package instructions. Drain and rinse with cold water to cool the pasta.

In a large mixing bowl, combine the cooked orzo, diced cucumber, halved cherry tomatoes, sliced Kalamata olives, crumbled feta cheese, and chopped fresh parsley.

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, salt, and pepper to make the dressing.
