Mac and Cheese, Cheesy Bread and Green Salad

This easy dinner idea is a comfort food full of goodness. I like to make fresh pasta for this dish, however, you can easily use store purchased pasta. The green salad and cheesy bread truly make this an incredible dinner!

Ingredients

For the Cheesy Bread: 4 cups flour
1 tbsp season salt
1/3 cup olive oil
1 1/2 cups water
2 tsp instant yeast
3 cups shredded cheese, your choice
Italian seasoning
For the Mac and Cheese: 1 pkg elbow macaroni
4 tbsp butter
4 tbsp flour
3 cups milk
3 cups shredded cheese
Salt and pepper to taste
Freshly grated parmesan reggiano cheese, garnish
For the Green Salad: 1/2 head iceberg lettuce
1 cup piled, chopped kalamata olives
1 cup grated parmesan cheese
1/3 cup Italian dressing
Freshly grated parmesan reggiano cheese, garnish
Salt and pepper to taste
Italian Seasoning

Instructions

To make the cheesy bread: To the bowl of your mixer, add the flour, season salt, olive oil, water and yeast. Mix/knead everything together for about 15 minutes. Cover and let the dough double in size.

Roll portions of the dough out into 6 inch round, sprinkle with shredded cheese and Italian seasoning. Bake in a preheated 450 degree oven for about 12 minutes or until crust is golden. Remove from the oven, let cool and cut into strips to serve with the mac/cheese and green salad.

To make the Mac and Cheese: Cook the pasta according to manufacturers directions. If using a pasta machine, follow the manufactures instructions for making macaroni. Drain, rinse and set the cooked pasta aside.

Heat a large sauté pan on the stove. To the pan, add the butter and melt then whisk in the flour to combine. Pour the milk into the pan and gently whisking, bring to a boil and simmer to 2-3 minutes to thicken the sauce. Add the shredded cheese, stir to melt and combine.

Add the cooked and drained pasta to the cheese sauce. Gently fold together to combine. Add salt and pepper to taste.

To make the green salad: Chop the iceberg lettuce into bitesize pieces and add it to a large bowl along with kalamata olives and the shredded parmesan cheese. Toss to combine. Just before serving, add the dressing and toss together. Salt and pepper to taste and sprinkle with Italian seasoning and fresh grated parmesan reggiano cheese.

Serve the freshly made mac and cheese with the green salad and cheesy bread. Garnish with freshly grated parmesan reggiano cheese and enjoy!
