Lemon Almond Poppy Seed Bundt

Ingredients

20 Rhodes dinner rolls, thawed to room temperature
1 cup prepared lemon curd
1/2 cup granulated sugar
8 ounces cream cheese, softened
Zest and juice of 2 lemons
1 tablespoon poppy seeds
1 teaspoon almond extract
1/4 cup granulated sugar
For the icing: 1 cup powdered sugar
2 tablespoons lemon juice
1 stick butter, melted (8tbsp)

Instructions

Cut each dinner roll in half and set aside.

Grease a bundt pan with cooking spray.

In a bowl, mix together the lemon curd, 1/2 cup granulated sugar, cream cheese, zest of one lemon and the poppy seeds. Set aside.

In a separate bowl, mix the zest of one lemon with 1/4 cup granulated sugar.

Dip each roll half into the lemon zest sugar mixture and place them in the bundt pan, alternating with the lemon curd mixture.

Loosely cover the bundt pan and let the dough proof until it reaches the top of the pan.

Preheat the oven to 350°F (175°C) and bake the bundt for 17 minutes uncovered. Then, loosely cover the pan with foil and bake for another 17 minutes. Finally, uncover and bake for an additional 5 minutes.

Remove the bundt from the oven and careful invert onto a large plate and let cool.

Mix the powdered sugar, lemon juice and the melted butter together to make the icing. Drizzle the icing over the bundt.
