Italian Focaccia

Italian Focaccia

This delicious bread is a favorite of mine to make sandwiches. I was once told that a good slice of focaccia should leave a napkin oily.

Ingredients

8 cups flour
3 cups water
1/2 cup extra virgin olive oil, plus extra
2 tbsp salt
1 tsp yeast
2 tbsp Italian Seasoning
1 tbsp granulated garlic
Toppings, your choice

Instructions

In the bowl of your mixer, add the flour, water, extra virgin olive oil, salt and yeast. Mix and knead the dough for 15 minutes.

Transfer the dough to a large bowl you have sprayed with vegetable oil, spray the top of the dough with vegetable oil and loosely cover the bowl. Allow the dough to double in size.

Once the dough has doubled in size, pour about 1/4 cup of extra virgin olive oil on a baking sheet with sides and spread it all around. Transfer the dough to the prepared baking sheet and gently press the dough out to fill up the pan. Carefully press your fingertips in to the dough creating “dimples” on top of it.

Drizzle about 1/4 cup more of extra virgin olive oil over the top (gently spread it around) and sprinkle the Italian seasoning and granulated garlic over the top of the dough. Gently tap the top of the dough to press the toppings into the olive oil.

Top the dough with any additional toppings you choose, I like olive, sliced onions, garlic…etc.

Allow the dough to double in size again. Once doubled, bake in a 350 degree oven for about 30-40 minutes or until it is golden brown.

Remove from the oven, invert the bread on a cooling rack and allow it to completely cool. Cut and serve as needed.
