Pimento Grilled Cheese Sandwich Recipe

Irresistible Pimento Grilled Cheese Sandwich

Ingredients

Pimento Cheese Spread: 2 cups shredded sharp cheddar cheese
1/2 cup mayonnaise
1/2 cup cream cheese
4 oz pimentos or pickled jalapenos, drained and chopped
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional for a spicy kick)
Salt and pepper to taste
For the Sandwich: 4 slices of your favorite bread (sourdough or whole wheat work well)
2 tablespoons butter, at room temperature

Instructions

Make the Pimento Cheese Spread: In a mixing bowl, combine shredded cheddar cheese, mayonnaise, chopped pimentos, garlic powder, onion powder, cayenne pepper (if using), and a pinch of salt and pepper. Mix until well combined. Taste and adjust seasonings as necessary.

Assemble the Sandwich: Spread a generous amount of the pimento cheese mixture on one slice of bread. If desired, layer optional ingredients such as tomato, bacon, or avocado on top of the pimento cheese. Top with another slice of bread to make a sandwich. Repeat to make the second sandwich.

Grill the Sandwich: Heat a skillet or griddle over medium heat. Butter the outside of each sandwich generously with softened butter. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down gently with a spatula for even grilling, being careful not to squish the sandwich too much.

Serve: Once grilled to perfection, remove the sandwiches from the skillet. Let them sit for a minute before cutting in half. This allows the cheese to set a bit and prevents it from oozing out when you cut into the sandwich. Enjoy your irresistible Pimento Grilled Cheese Sandwiches!
