Garlic Fluff (Toum)

Garlic Fluff (Toum)

This Middle Eastern sauce is a garlic emulsion that resembles mayonnaise. It can be enjoyed on grilled meats, sandwiches or salads. I love making  pita sandwich using the toum as the spread.

Ingredients

1 cup raw peeled garlic
2 tsp salt
Juice from one lemon (1/4 cup)
3 cups vegetable oil

Instructions

To make the garlic fluff, add the prepared garlic into the bowl of your food processor and chop to a paste, scraping down the bowl as often as needed to create paste.

Add the salt and lemon juice, scrapping down the bowl and mixing together with a few pulses.

Slowly drizzle in the vegetable oil to create and emulsion while the machine is running constantly.

Once the oil is emulsified, taste and adjust salt as needed. Transfer the garlic fluff to a sealable container, cover with a paper towel and refrigerate over night to mellow the garlic flavor.

Serve with grilled meat, sandwiches or your favorite salad and enjoy! On air, I serve this with sliced London Broil beef on pita bread with micro greens and sliced tomatoes.
