Ingredients

1 tablespoon olive oil
1 cup finely diced yellow onion
4 cloves garlic, minced
1 pound dry chorizo, thinly sliced
2 tablespoons Cajun seasoning (optional, to taste)
1 15-ounce can diced tomatoes
1 cup heavy cream
1 cup Cache Valley® mozzarella, shredded (divided)
1 cup Cache Valley® pepper jack cheese, shredded (divided)
2 12-ounce packages gnocchi
4 ounces fresh baby spinach
Salt and pepper to taste
Shredded Cache Valley® Parmesan cheese for topping

Instructions

Heat olive oil in a large skillet over medium-high heat. Sauté diced onion until soft and golden, about 2 minutes.

Add minced garlic to the skillet and sauté for 30 seconds until fragrant.

Introduce thinly sliced chorizo to the skillet. Brown each side, working in batches if needed.

Optionally, sprinkle Cajun seasoning to taste and sauté for another 30 seconds.

Reduce heat to medium-low, then pour in diced tomatoes and heavy cream. Mix well to combine.

Add gnocchi to the skillet. Cover and simmer until gnocchi is cooked (plump and tender), approximately 8-10 minutes.

Combine mozzarella and pepper jack shreds. Gently stir in 1 1/2 cups of the shredded Cache Valley Creamery mozzarella and pepper jack cheese until melted and well combined.

Add spinach and continue to cook until just wilted.

Season with salt and pepper to taste.

Sprinkle the remaining shredded cheese blend on top of the gnocchi mixture in the skillet.

Serve hot, topped with shredded Parmesan cheese for an extra burst of flavor.
