Ingredients

4 boneless, skinless chicken thighs
2 eggs
2 cups seasoned bread crumbs
2 sweet potatoes, peeled and cut into fries

1 tbsp dill pickle relish
4 buns
Condiments of choice

Instructions

Begin by seasoning the chicken thighs with salt and pepper. Then, dip each thigh in beaten egg and coat thoroughly with seasoned bread crumbs.

Heat oil in a frying pan and fry the chicken thighs until golden brown and fully cooked. Set aside.

For the homemade mayonnaise, blend 1 egg yolk, oil, mustard, lemon juice, salt, and sugar until smooth and creamy. Adjust seasoning to taste.

Prepare the ketchup by mixing tomato paste, white vinegar, honey, sugar, onion powder, garlic powder, Worcestershire Sauce, and salt in a bowl. Add water to achieve desired consistency and adjust seasoning.
