Baking Powder Biscuits with Pear Butter

Baking Powder Biscuits with Pear Butter

These biscuits and pear butter and a treat everyone needs to enjoy. Making fruit butters is a perfect way to re-purpose ripe fruit for a delicious treat!

Ingredients

For the Biscuits: 4 cups self-rising flour
1 stick butter, softened (8 tbsp butter)
1/2 cup sugar
2 tsp salt
1 1/2 cups butter milk
For the Pear Butter: 5-6 ripe pears
1 lemon, juiced
1 cup brown sugar
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1/8 tsp ground cloves

Instructions

1
To make the biscuits, add the self rising flour, softened butter, sugar and salt into a large mixing bowl. Using your hands, mix the butter into the flour.
2
Add the buttermilk and mix into a shaggy dough.
3
Transfer to a floured work surface, and gently knead and shape the dough into a disk about 1 1/2 inches thick. Cut into 3-4 inch rounds and transfer to a parchment lined baking sheet.
4
Preheat your oven to 350 degrees and bake in your oven for about 15 minutes or until the tops begin to turn golden brown.
5
Remove from the oven, cool and serve with my delicious homemade pear butter.
6
To make the pear butter, peel and chop the pears adding them into a large sauce pan.
7
Drizzle the pears with the lemon juice, gently stirring to coat with the lemon juice.
8
Add the brown sugar, salt, cinnamon, nutmeg, ground ginger and ground cloves to the pan stirring to incorporate.
9
Heat on low with a lid on the pan and cook down for an hour stirring occasionally. I like using an immersion blender to puree the fruit after its cooked for an hour. Continue cooking until a spoon pulled through mixture leaves and a trail that you can easily see the pan.
10
Remove form the heat, cool and store in an airtight container for 2 weeks in the fridge. Serve with my delicious baking powder biscuits for a wonderful treat!
