Pork Bolognese

Pork Bolognese

While traveling through Italy, I fell in love with the wonderful meat sauce that was created in Bologna, Italy.  Normally, the sauce is made with ground beef, however, I have discovered I love it with shredded pork or pork sausage or a combination of both.  Be sure to serve with large (wide) noodles to capture the sauce and enjoy!

Ingredients

2 tbsp olive oil
2 tbsp butter
1 large onion, sliced
1 cup chopped celery
1 cup chopped carrot
1 tbsp garlic, minced
4 cups shredded pork or pork sausage (can combine too)
1 cup white wine
2 cups milk
1- 28 oz can diced Italian style tomatoes
1 - 6 oz can Italian style tomato paste
1 cup beef stock
pasta of choice

Instructions

Heat a large saute pan on the stove and add the olive oil and butter. Melt the butter and olive oil together.

Add the sliced onion, celery, carrot and garlic. Saute for about 3-5 minutes or until very fragrant.

Add the pork sausage and/or shredded pork. Saute until fully cooked or warmed through.

Add the white white and deglaze the pan. Add the milk, diced tomatoes, tomato paste, and beef stock.

Bring the mixture to a boil, reduce the heat to a low simmer and cook for about 30-45 minutes. This recipe also works great in a slow cooker on low for about 8 hours.

I like to use thick noodles (like lasagna) noodles for this dish. Cook the noodles according the package directions, once cooked transfer them to the pot of pork bolognese sauce and toss to coat. Serve with artisan bread of your choice and enjoy!
