Sope's with Picadillo

Sope’s with Picadillo

Whether you want a yummy dinner or a great appetizer for a party, this recipe is perfect.

Ingredients

4 cups shredded lettuce
Salsa Queen creamy jalapeño
Oil for deep frying
For the sope bowls: 2 1/2 cups Maseca instant masa corn flour
1 cup water
2 tsp salt
For the Filling: 1 pound ground hamburger
2 potatoes, peeled and diced
2 carrots, sliced
1 container Salasa Queen gourmet pico salsa (15.5 oz)

Instructions

To make sope bowls, combine the Maseca, water and salt into a large bowl and mix together until the texture is that of “play-dough”. If needed, add additional water or Maseca to reach this consistency.

Using about 1/3 of a cup of the dough, shape into a flat disk with small sides. Set the prepared sope disks onto a baking sheet.

Heat a large pot with pot with about 3-4 inches of oil in it to about 350 degree’s. Deep fry the sope disk until they are a light golden brown, remove from the oil and place them on a plate lined with paper towels to absorb any excess oil. Repeat until all sope disks are fried.

Heat a large saute pan on the stove and add the hamburger, diced potatoes, sliced hamburger and . Cook the hamburger throughly, continuing to cook until the potatoes and carrots are tender. If needed add additional water to the hamburger mixture to the vegetable cook through.

To assemble the dish, spoon the cooked hamburger mixture into the fried sope bowls and top with Salsa Queen creamy jalapeño, queso fresco and shredded lettuce. Enjoy!
