Oakdell Egg Breakfast Tacos

Created by the talented Chef Bryan Woolley, this recipe combines the rich goodness of chorizo, the crunch of caramelized hash browns, and the freshness of pico de gallo. Topped with perfectly fried Oakdell Eggs, these breakfast tacos are a mouthwatering delight that’s both satisfying and quick to prepare.

Ingredients

2 pounds cooked chorizo
1 small sliced onion
1 tablespoon minced garlic
3-4 peeled and shredded Russet potatoes
4-6 Oakdell Eggs
3-4 cups shredded cheese
3-4 cups fresh pico de gallo
1/2 cup sweet chili sauce
1/2 teaspoon toasted sesame seed oil
Corn or flour tortillas (your choice)

Instructions

Begin by heating a large frying pan on the stove. Cook the chorizo until it's fully cooked. Once done, remove the chorizo from the pan and set it aside.

While the pan is still hot, add the sliced onion and minced garlic to the leftover chorizo grease. Sauté the mixture until it becomes fragrant.

Take the peeled potatoes and shred them. Rinse the shredded potatoes and then squeeze out as much water as possible.

Add the shredded potatoes to the pan with the sautéed onion and garlic. Press the potatoes down to spread them evenly across the pan. Let them cook until they caramelize on one side, then flip them over and repeat the process. Once cooked, remove the hash browns from the pan.

Place the tortillas in the pan. Generously cover them with shredded cheese, then cover the pan to melt the cheese.

To assemble the tacos, start by placing the caramelized hash browns over the melted cheese. Follow this with the cooked chorizo.

Fry the Oakdell Eggs to your preferred doneness. Once fried, place an egg on top of each taco.

Finish off your tacos by spooning prepared pico de gallo over the top. Drizzle with sweet chili sauce and toasted sesame seed oil.
