Perfectly Roasted Pork Tenderloin

Looking for a savory dish that’s easy to prepare but tastes like a gourmet meal? This Roasted Pork Tenderloin with Herb Garlic Marinade is the answer. With just a few simple ingredients and less than 30 minutes in the oven, you’ll have a tender, juicy pork tenderloin that’s sure to impress. Whether it’s a weeknight dinner or a special occasion, this dish delivers on flavor and simplicity.

Ingredients

1 pork tenderloin (about 2 lbs)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste

Instructions

1
Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature ensures a crispy outer layer and a tender interior.
2
Prepare the Marinade: In a small bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well to create a fragrant marinade.
3
Coat the Pork: Place the pork tenderloin in a roasting pan or baking dish. Pour the marinade over the pork, ensuring it's evenly coated.
4
Roast the Pork: Place the roasting pan in the oven and let the pork cook for 20-25 minutes, or until the internal temperature reaches 140°F (63°C).
5
Rest and Slice: Remove the pork tenderloin from the oven and let it rest for 5-10 minutes. This resting period allows the pork to finish cooking (fully cooked 145 degrees) with carry over temperatures and the juices to redistribute, ensuring a moist and tender result. After resting, slice the pork into medallions and serve with your favorite sides.
6
Serve garlic mashed potatoes, roasted vegetables and a freshly baked apple crisp to complete your menu.
