Ingredients

6 pork chops
1 tbsp (15 ml) olive oil
¼ tsp (1 ml) each of basil, salt, pepper, and paprika
6 egg yolks
½ cup (125 ml) granulated sugar
1½ cups (375 ml) Marsala or sweet vermouth
½ cup (125 ml) fresh raspberries

Instructions

Preheat your oven to the broil setting.

Brush each pork chop with olive oil and generously sprinkle with basil, salt, pepper, and paprika, or use your preferred seasoning blend.

Arrange the seasoned pork chops on a baking sheet and broil in the oven for 3-5 minutes per side until they are cooked through. Keep them warm.

In the top of a double boiler, whisk together the egg yolks and granulated sugar until they become foamy and pale in color.

Set the double boiler over boiling water and slowly pour in the Marsala or sweet vermouth while continuously whisking the mixture.

Cook the mixture until it thickens and becomes foamy. Remove it from the heat.
