Easy Lasagna Soup Recipe – Hearty & Delicious

Looking for a cozy and satisfying dinner option? Look no further than our Lasagna Soup recipe! Packed with the rich flavors of lasagna but in a comforting soup form, this dish is perfect for a chilly evening or a family gathering. Plus, it’s incredibly easy to make. Let’s dive into this delicious culinary adventure.

Ingredients

1 lb cooked meat (pork, beef, poultry)
1 onion, diced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 can (14 oz) tomato sauce
4 cups beef broth
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup broken lasagna noodles
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil leaves, for garnish (optional)

Instructions

1
In a large pot or Dutch oven, heat the cooked meat (leftover shredded meat works great) over medium heat until it's warmed through. Be sure to drain any excess fat.
2
Add the diced onion and minced garlic to the pot. Sauté them for 2-3 minutes until the onion turns translucent and aromatic.
3
Stir in the diced tomatoes, tomato sauce, beef broth, dried basil, dried oregano, salt, and black pepper. Bring this flavorful mixture to a gentle boil.
4
Reduce the heat to low and let the soup simmer for approximately 20 minutes. This allows all the delightful flavors to meld together. After about 10 minutes, add the broken lasagna noodles, letting them cook alongside the soup.
5
To serve, ladle the piping hot Lasagna Soup into bowls. Top each serving with a generous sprinkling of shredded mozzarella and grated Parmesan cheese.
6
For an extra burst of flavor and an appealing presentation, you can garnish your soup with fresh basil leaves.
7
Now, all that's left to do is savor and enjoy your delicious Lasagna Soup!

Note: Remember to adjust the salt and pepper to your taste, and feel free to customize this soup with your favorite ingredients like mushrooms or spinach for added nutrition and flavor.
