Ingredients

1 cup cold butter, cut up
3 cups flour
1 tsp salt
1 egg
2 tsp white vinegar
3/4 - 1 cup water
2 quarts prepared tart pie cherry filling

Instructions

1
Begin with the crust: In the bowl of your food processor, combine the cold butter, flour, and salt.
2
Pulse until the butter is chopped into the flour, creating a coarse cornmeal-like texture.
3
Transfer the flour mixture to a large mixing bowl.
4
Prepare the dough: In a separate bowl, mix the egg and white vinegar together.
5
Add the egg-vinegar mixture to the flour mixture, along with 3/4 cup of cold water.
6
Gently mix until the ingredients come together to form a soft dough.
7
Divide the dough into 4 equal portions.
8
Line the pie tins: Take 2 of the portions and use them to line the bottom of 9-inch pie tins, creating the base crust.
9
Add the cherry filling: Pour one quart of prepared tart cherry pie filling into each of the prepared pie tins.
10
Create the top crust: Roll out the remaining 2 portions of dough into flat rounds.
11
Cut a steam vent into each round.
12
Place the rounds on top of the pies, and if necessary, trim any excess dough around the tin.
13
Seal the pies: Use a fork to crimp the edges of the top and bottom crusts together, ensuring a tight seal.
14
Enhance the appearance and flavor: Brush the top crust with an egg wash (1 egg mixed with 1 tbsp water) to create a shiny finish.
15
Sprinkle a mixture of sugar and pumpkin pie spice over the top for added sweetness and aroma.
16
Bake to perfection: Preheat your oven to 350 degrees Fahrenheit. Place the pies on a baking sheet to catch any spills.
17
Bake for approximately 45 minutes or until the crust turns a beautiful golden brown, and the filling starts to bubble.
18
Serve and enjoy: Once baked, remove the pies from the oven and allow them to cool. Cut into slices and serve each piece with your favorite ice cream for a delightful treat!
