BBQ Beef Biscuit Sliders

BBQ Beef Biscuit Sliders

A delicious beef slider is always a great option for dinner. These sliders mix it up a bit and are served on buttermilk biscuits for a wonderful twist!

Ingredients

1 beef tri-tip roast, about 2 pounds
1 cup BBQ sauce
1 tbsp chipotle peppers in adobo sauce, seeded and minced
18 buttermilk biscuits, already baked
1 cup crushed corn tortilla chips
1 pkg coleslaw mix
1 small red pepper, seeded and thinly sliced
1/4 cup finely chopped cilantro
1/3 cup prepared coleslaw dressing
Salt and pepper to taste

Instructions

In a small bowl combine the bbq sauce, chipotle peppers mixing the two together. Reserve 3/4 cup of the sauce mixture and set aside. Brush the remaining sauce on the tri-tip roast.

Heat your grill up and place the prepared roast on the grill and cook until the internal temperature is 135 degreeā€™s. Remove the roast once it reaches the internal temperature and cover will foil. Let the roast rest for 20 minutes.

While the roast is resting, prepare the slaw by combining the slaw mix, sliced bell pepper, green onions, cilantro and dressing together until fully incorporated.

Thinly slice the rested roast against the grain into thin slices. Toss the slices with the remaining BBQ sauce.

Slice the biscuits in half and top with a few slices of the roasts, prepared coleslaw. If you choose, crush ups some corn tortilla chips and sprinkle them on top of the of the sandwich for extra crunch.
