Veggie Noodle Stir Fry

Veggie Noodle Stir Fry

Quick and delicious, this veggie noodle stir fry is a homemade fast food dream. Mix up the veggies and customize it to your likings. Can’t wait for you to try this one and as always, tag me in your food pictures, #chefbryan.

Ingredients

1 cup slice mushrooms
1 large carrot, peeled and thinly sliced
1/2 onion, sliced
1/3 cup chopped sun dried tomatoes
1/4 cup freshly chopped chives
1/4 freshly chopped parsley
1 tbsp freshly chopped ginger
3 kaffir lime leaves or zest and juice of one lime
2 tbsp season sauce
2 tbsp oyster sauce
6-8 cups Asian style rice noodle, cooked and drained
cooking oil

Instructions

Cook the Asian noodles as directed on the package, rinse and set aside.

Heat your wok or sauté pan and add about 2 tbsp oil.

Sauce the sliced mushrooms, carrot, onion, sun dried tomatoes, fresh chives, parsley, ginger and kaffir lime leaves (can use zest of one lime and juice) for about 3 minutes or until fragrant.

Add the season sauce and oyster sauce, stir to combine.

Add the cooked noodles, folding everything together.

Serve on a bed of greens with a couple of slices of avocado on the side. Enjoy!
