Tomato Soup with Grilled Cheese Sandwich

Tomato Soup with Grilled Cheese Sandwiches

Rather than open can of tomato soup, why not make it from scratch? A delicious treat anytime of the day, this homemade tomato soup and grilled cheese sandwiches are easy to make.

Ingredients

For the Soup: 10-12 fresh tomatoes
1 cup chicken stock
1 can Italian tomato paste, 6 oz. can
1 tbsp Italian seasoning blend
1/2 small onion
1 tbsp minced garlic
1 tbsp no-salt herb blend
Salt and pepper to taste
For the Cheese Crisps: 2 cups shredded parmesan cheese
For the Grilled Cheese Sandwich 8 slices of bread
16 slices of cheese
vegetable spray

Instructions

To make the soup, add all of the soup ingredients into your blender and puree together.

Transfer the tomato mixture to a large pot, bring to a bowl and reduce the heat to a simmer and cook for 10-15 minutes, stirring on occasion. Taste, season with salt and pepper as needed.

To make the cheese crisps, heat a non-stick pan on the stove and pour 1/2 cup at a time of the shredded parmesan cheese into the pan and carefully spread it into a 3 inch circle (more or less).

Let the cheese melt and brown on one side and using a spatula, carefully turn the cheese crisp over to brown the other side. Remove from the pan and repeat with the remaining cheese.

To make the grilled cheese sandwiches, divide the cheese slices between 4 slices of bread and top each slice with the other pieces of bread.

Heat a large saute pan on the stove and spray each side of the bread slices with vegetable spray and pan “grill” each side of the sandwiches for about 2 minutes or until they are golden brown and the cheese has melted.

Serve the soup with the cheese crisps and grilled cheese sandwiches. Enjoy!
