Thumbprint Jam Cookie

Thumbprint Jam Cookies

I love shortbread and this cookie is a variation that adds jam. I take it a step further and drizzle a powdered sugar frosting over the top to add color and yet another variation.

Ingredients

For the Shortbread Cookie: 1 cup butter, room temperature
1/3 cup powdered sugar
2 cups flour
1 tsp vanilla
1 tsp almond extract
1/2 tsp salt
Favorite Jam
For the Frosting:
1 cup powdered sugar
1/4 cup cream (more or less)

Instructions

Preheat your oven to 350 degree’s.

To make the shortbread cookie add the room temperature butter, powdered sugar, flour, vanilla, almond extract and salt to a large bowl and mix together by hand until through combined.

Spoon about 2-3 tbsp of batter into your hand and roll into a ball. Using your thumb, press into the top of the cookie dough ball partially flattening the cookie and making a thumb imprint. Place the cookie onto a parchment lined baking sheet.

Carefully spoon your favorite jam into the thumb print and bake off the cookies for about 15 minutes or until they are golden. Every oven is different so adjust cooking times as needed for your oven.

When the cookies are golden brown, remove from the oven, set aside and let them cool.

While the cookies are cooling, make the frosting by combining the powdered sugar and cream into a mixing bowl and whisk to gather to combine. If needed, add additional cream or powdered sugar to create a thicker frosting that can easily be drizzled over the cooled cookies.

Once you’ve drizzled or piped the powdered sugar frosting over the cookies, serve and enjoy.
