Sugar Cookies with American Buttercream

Sugar Cookies with American Buttercream

This cooke recipe isn’t a true “sugar cookie” because it doesn’t contain a leavener like baking powder or soda. This recipe is really a butter cookie. Either way you look at it, these cookies are delicious!

Ingredients

For the Cookie Dough: 1 cup softened butter
1 cup sugar
2 large eggs
4 cups flour
1 tsp salt
1 tbsp vanilla extract
For the American Buttercream: 1 cup softened butter
4 cups powdered sugar
1/2 tsp vanilla
1/2 tsp almond extract

Instructions

To make the cookie dough, add the softened butter to the bowl of your stand mixer with the paddle attachment. Whip the butter for 3 minutes.

Add the sugar and mix for another 3 minutes, scraping the sides of the bowl as needed.

Add the eggs and throughly mix to incorporate, scraping the sides as needed.

Add the flour, salt and vanilla extract; blend until the entire mixture has combined together into a soft dough (about 3 minutes).

Roll the dough out between two pieces of parchment paper to about 1/4 inch thick. Use your favorite cookie cutter and cut out the cookies places them on a parchment lined baking sheet. Re-roll the dough as need until you have all the cookies cut out.

Refrigerate the sheet pans with the cookies on them for at least 1 hour before baking.

When ready to bake, preheat your oven to 350 degreeā€™s. Place the chilled cookies into the oven and bake for 12-15 minutes or just until the edges begin to turn golden brown. Remove from the oven and let the cookies cool on the baking sheets. These cookies are easier to decorate if you let them sit out for 24 hours.

To make the American buttercream, add the softened butter to the bowl of your stand mixer with the paddle attachment. Cream the butter for about 3 minutes. Add the powdered sugar, vanilla and almond extracts. Mix until everything is throughly combined. Color the buttercream as desired. Decorate your sugar cookies and enjoy!
