Strawberry Pancakes with Coconut Syrup

Strawberry Pancakes with Coconut Syrup

Freshly made strawberry pancakes are the best. However, served with some fresh coconut syrup is amazing! Enjoy this easy to make pancake recipe with coconut syrup.

Ingredients

Pancakes: 1 1/4 cups buttermilk
2 eggs
1/4 cup vegetable oil
1 cup hulled and chopped strawberries
1 1/2 cups flour
1 tbsp baking powder
1 tsp salt
1/4 cup sugar
Coconut Syrup: 13.5 ounce coconut milk
1 tbsp cornstarch
1/2 cup corn syrup
1/2 cup sugar
1 tsp vanilla

Instructions

In your blender, combine the pancake ingredients (buttermilk, eggs, vegetable oil, prepared strawberries, flour, baking powder, salt and sugar) and puree until smooth and combined.

Preheat your griddle/pan and spray with vegetable spray to prevent sticking.

Pour the pancake batter onto the preheated griddle/pan into your desired diameter size. Cook for about 2 minutes on each side or until golden brown. Continue cooking until pancake batter is used up.

To make the coconut syrup, add the coconut milk and cornstarch to a pan and whisk together to combine. Add the corn syrup, sugar and vanilla and mix together. Bring to a boil while stirring and boil for 2 minutes. Remove form the heat and cool.

To serve to strawberry pancakes, serve with stop e freshly chopped strawberries on top and the freshly made coconut syrup. Enjoy!
