Spinach Manicotti

Spinach Manicotti

Delicious and fun to make, spinach manicotti is a great idea for dinner anytime. I like to cook the manicotti shells first and then fill them with my fillings. Customize your fillings to your likes.

Ingredients

1 pkg Manicotti shells, 8 ounce pkg.
1 1/2 cups ricotta cheese
1 cup cooked, drain and dried spinach
2 eggs
1 1/2 cup shredded mozzarella cheese
1 1/2 cup shredded parmesan cheese
2 tbsp Italian blend seasoning
1 bottle prepared pasta sauce, 24 ounces
Salt and pepper to taste

Instructions

Preheat your oven to 350 degreeā€™s.

Cook the Manicotti shells as directed by the package directions. Drain and cool before filling.

In a large bowl mix the ricotta cheese, cooked spinach (be sure you have squeezed all of the water out of the cooked spinach), eggs, 1 cup shredded mozzarella cheese, 1 cup shredded parmesan cheese and the Italian seasonings. Mix everything together to combine and add salt/pepper to taste as needed.

Pour half of the pasta sauce in a 9x13 baking dish and set aside.

Fill a pastry bag or a large re-sealable bag and cut the tip of the pastry bag off or the corner of the re-sealable bag and pipe the filling into each cooked manicotti shell to fill it up. Continue with all of the shells until they are filled. Once the shells are filled place them in the prepared baking dish.

Once the baking dish has been filled with the filled manicotti shells, pour the remains pasta sauce over the top of the shells making sure they are covered, preventing them from drying out while in the oven.

Cover the top of the manicotti with the remaining shredded cheese and place in the oven for 30-40 minutes. Make sure the top has browned and the filling/cheese is bubbling before taking them out to the oven.

Once you remove the manicotti from the oven let it sit for 10 minutes before serving. Serve with a green salad and your favorite bread on the side. Enjoy!
