Smoky BBQ Chicken and Cheese Quesadilla Recipe

Ingredients

2 large flour tortillas
1 cup cooked and shredded chicken
1/2 cup BBQ sauce
1 cup shredded cheddar cheese
1/4 cup chopped red onion
2 tablespoons chopped cilantro
Cooking oil or butter for grilling

Instructions

In a bowl, mix the shredded chicken with BBQ sauce until evenly coated.

Place a tortilla on a flat surface and sprinkle half of the shredded cheese evenly over one half of the tortilla.

Spread the BBQ chicken mixture over the cheese, then top with chopped red onion and cilantro.

Sprinkle the remaining cheese on top of the chicken mixture.

Fold the tortilla in half to cover the filling.

Heat a pan over medium heat and add a little oil or butter.

Carefully place the quesadilla in the pan and cook for 2-3 minutes on each side until the tortilla is crispy and the cheese is melted.
