Romeo’s Kisses

These delicious cookies are perfect for a luncheon dessert. Buttery rich and chocolatey, these cookies will make bring a smile to your face!

Ingredients

2 sticks butter, softened
1/2 cup powdered sugar
1/2 tsp almond extract
2 cups flour
1/4 tsp salt

For the Filling: 1/2 cup chocolate chips
2 tbsp butter
1/3 cup ground almonds, toasted

Instructions

Preheat your oven to 350 degree’s.

Add the softened butter and powdered sugar to the bowl of your mixer. Mix everything together until well combined.

To the mixer, add the almond extract, flour and salt mixing everything together until a soft dough forms.

Divide the dough into 26 even portions. Roll each portion into a round balls. Place them on a baking sheet lined with parchment paper.

Bake the cookies for about 11 minutes, remove from the oven and let them cool on the baking sheet.

In a small sauce pan, slowly melt the chocolate chips and butter together until melted. I do this on the lowest setting on my stove and watch it. You can also melt in on a double boiler, microwave or a warm oven in you choose.

Once the chocolate and butter are incorporated add the toasted ground almonds and mix together to combine.

Use the chocolate mixture as a frosting and frost the flat side of one cookie and sandwich another cookie against it. Continue until all the cookies are finished.

Serve with your favorite coffee or beverage for a fun luncheon dessert.
