Ingredients

2 pork tenderloins (1 pound each)
Salt and pepper or your favorite seasoning blend, to taste
2 tbsp olive oil
1 cup cranberry sauce
2 tbsp balsamic vinegar
2 tbsp honey
2 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried thyme

Instructions

1
Preheat your oven to 375°F (190°C). Season the pork tenderloins with salt and pepper or your favorite seasoning blend on all sides.
2
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloins on all sides until browned, about 2-3 minutes per side.
3
In a small bowl, mix cranberry sauce, balsamic vinegar, honey, minced garlic, rosemary, and thyme. Heat to a simmer while stirring.
4
Pour half of the cranberry glaze over the seared pork tenderloins, ensuring even coating.
5
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 135°F.
6
Remove the skillet from the oven and let the pork rest for 5-10 minutes tented with aluminum foil before slicing.
7
Serve the roasted pork tenderloin with additional cranberry glaze drizzled over the top. Garnish with fresh herbs, if desired.
8
Enjoy your festive Christmas pork dish! Complement with roasted vegetables and apples, and create a simple pan sauce for the perfect holiday dinner.
