Brazilian Cheese Bread

Brazilian Cheese Bread

While living in Brazil, I fell in love with the cheese bread they had there. This dough uses sweet and sour polvilho that you can find at most Latin American grocery stores or use tapioca flour you can find in your local grocery store.

Ingredients

1 cup milk
1 cup vegetable oil
1 tbsp salt
2 cups sweet polvilho or 2 cups tapioca flour
2 cups sour polvilho or 2 cups tapioca flour
4 eggs
3 cups shredded parmesan cheese
1 cup shredded mozzarella cheese

Instructions

Preheat your oven to 350 degree’s Fahrenheit.

Add the milk, vegetable oil and salt to a sauce pan and bring to a boil. When mixture comes to a boil, remove from the heat so it doesn’t boil over.

In the bowl of your mixer add the sweet and sour polvilho. Polvilho is nothing more than tapioca flour so If you can't find polvilho in your area, use tapioca flour. There are several manufacturers of tapioca flour and it is readily available at most grocery stores.

Slowly add the hot milk mixture while mixing it all together. Let the dough cool before adding the eggs mixing everything together until well combined.

Add the cheese (shredded parmesan and mozzarella) and mix into the dough.

When everything is mixed together, spray your hands with vegetable spray or dip in water and add about 3 tbsp of dough in your hands. Roll the dough into balls and place on a parchment lined baking sheet that has been sprayed with vegetable spray.

Leave a small space in-between each ball allowing room for the cheese bread to rise while baking.

Place in the oven and bake for about 20-25 minutes or until they are a lightly golden brown.

Remove from the oven and cool completely. Serve with your favorite dinner dish or enjoy by themselves.
