Ingredients

1 pkg chicken pieces (legs, thighs, or a whole chicken cut into pieces)
1/2 cup soy sauce
1/2 cup vinegar (white, rice or apple cider)
4 cloves garlic, minced
1 tbsp minced fresh ginger
1 onion, sliced
2-3 bay leaf
1 teaspoon whole black peppercorns
1 tablespoon cooking oil
1 cup water
Salt to taste

Instructions

Combine soy sauce, vinegar, minced garlic, ginger, sliced onion, bay leaf, and black peppercorns in a bowl. Mix well.

Coat chicken pieces with the marinade and let it marinate for at least 30 minutes, or overnight for a more intense flavor.

Heat cooking oil in a skillet. Brown chicken on all sides in batches.

Remove chicken, keeping the marinade. Pour reserved marinade and water into the pot, bring to a boil, then reduce heat.

Add chicken back to the pot, cover, and simmer for 30-40 minutes until cooked through and tender.

Uncover and simmer for an additional 10-15 minutes to thicken the sauce.

Adjust seasoning with salt to taste.
