Soup and Sandwiches, Tomato, Beef and Chicken Sandwiches

Soup and Sandwiches: A Classic Comfort Food Pairing

This delicious recipe for soup and sandwiches really hits the mark for dinner anytime of the year. Tomato soup is easy to make and pair with any kind of sandwiches. Whether your looking for a quick and delicious dinner idea or a wonderful lunch, this recipe is for you!

Ingredients

6 cups tomato juice
2 tbsp chicken bullion
1/4 cup flour
4-6 tbsp butter
2 cups shredded meat
1/2 cup diced onion
1 cup cooked garbanzo beans
1/4 cup chopped pickled jalapeños
1/2 cup mayonnaise
2-3 green onions, chopped
Sandwich rolls
Assorted chopped vegetables
Salt and pepper to taste

Instructions

To make the soup add the tomato juice to your blender and add the chicken bullion, flour, salt and pepper as needed and blend everything together.

Transfer the tomato soup to a sauce pan and simmer for 8-10 minutes to thicken. Add the butter and stir in, set aside.

To make the sandwiches add your shredded meat (i like using my bottled chicken or beef but you can use any canned meat) to a bowl along with the mayonnaise, chopped green onions, garbanzo beans, chopped pickled jalapeños, salt and pepper to taste. Mix everything together until combined.

Spread the meat mixture on your sandwich rolls and serve with the freshly made tomato soup and chopped fresh vegetables on the side. Enjoy.
