Simple Chicken Tortilla Soup

Simple Chicken Tortilla Soup

This delicious and very simple chicken tortilla soup is perfect for dinner and great for a late night treat.

Ingredients

1 rotisserie chicken, picked clean
2 cups sliced mushrooms
1 onion, peeled and sliced in half
4 garlic cloves
1 can kidney beans
1 can black beans
1 can corn
1 can diced tomatoes
8 cups chicken stock
4-5 whole roma tomatoes
3-4 whole dried Guajillo peppers
2 avocados, garnish
Cooking oil
Fried corn tortillas strips, garnish
Sour cream, garnish
Avocados, garnish
Salt and pepper to taste

Instructions

Heat a large pot on the stove and add enough oil to lightly coat the bottom of the pan.

Add the shredded chicken, mushrooms, onion halves, and the garlic cloves to the pot sautéing everything together for several minutes.

Add the kidney beans, black beans, corn and diced tomatoes (liquid and all) along with the chicken stock. Bring to a simmer and add the whole roma tomatoes and the dried guajillo peppers to cook for a few minutes and soften the dried guajillo peppers.

Once the peppers are softened, add them to a blender with the whole tomatoes, onion halves, handful of corn tortillas to help add flavor and thicken the soup and some of the stock, puree everything together and add back to the soup.

Simmer the soup for a couple more minutes, adjust salt and pepper to taste. Serve and garnish with sour cream, fried corn tortilla strips and avocado.
