Ingredients

4 cups cooked shredded chicken
4 cups shredded cabbage
1 cup shredded carrots
1 cup thinly sliced cucumber
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1/4 cup toasted sesame seeds
1/4 cup sliced almonds
1 cup mandarin oranges
3-4 cups chow mein noodles
1 1/2 cups cooked black beans (optional)
Dressing Ingredients: 2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey
1 tablespoon freshly grated ginger
1 clove garlic, minced
1/4 cup toasted sesame seeds

Instructions

In a large bowl, combine shredded chicken, cabbage, carrots, cucumber, green onions, mandarin oranges, chow mein noodles, (optional black beans), almonds, and cilantro.

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and toasted sesame seeds to create the dressing.

Just before serving, pour the dressing over the salad ingredients and toss to coat evenly.

Divide the salad onto plates or bowls and top with sliced grilled chicken.
