Old Fashioned Potato Soup

Ingredients

1/4 pound bacon, chopped
8 tbsp butter
2 onions, sliced
3-4 celery sticks, sliced
5-6 russet potatoes, peeled and diced
1/2 cup flour
6-8 cups chicken stock
1 can canned milk
1 cup shredded cheese. optional
Salt and pepper to taste

Instructions

To make the soup, heat a large pot on the stove and add the chopped bacon. Cook it until the fat is rendered out. Next, add the butter, sliced onions, sliced celery, and diced potatoes to the pot. Sauté everything together for a few minutes.

Sprinkle the flour over the mixture and stir to combine. Add the chicken stock and canned milk to the pot, stir, and let it simmer until the potatoes are fork-tender.

Using a sieve, remove half of the cooked potatoes and set them aside. Use an immersion blender to puree the remaining soup until it's smooth and creamy.

Add the cooked diced potatoes back into the pot, season with salt and pepper to taste, and optionally add shredded cheese for extra flavor. Serve the soup hot with freshly baked bread. Enjoy!
