Sourdough Banana Bread

Sourdough Banana Bread

I love banana bread and got thinking one day to create a sourdough version of this delicious bread. I hope you enjoy the recipe as much as I did! I served it with homemade apple jelly and whipped cream cheese. Click here for my sourdough zucchini bread and here’s the link for my sourdough starter recipe.

Ingredients

1 cup ripe bananas, smashed
3 large eggs, slightly beaten
1/4 cup vegetable oil
1 tsp vanilla extract
1 cup sourdough start
2 cups flour
3 tsp baking powder
1 tsp baking soda
3/4 cups sugar
1/2 tsp salt
1/2 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350 degree’s.

Spray two loaf pans with vegetable spray and set aside until ready to use.

In one bowl, combine the smashed bananas, eggs, vegetable oil, vanilla extract and sourdough start. Mix together until throughly combined.

In a separate bowl combine the flour, baking powder, baking soda, sugar, salt. Whisk all the dry ingredients together to throughly combine.

Add the dry ingredient mixture to the wet ingredients and using a large spoon, fold everything together until well combined.

If using nuts, fold the nuts in.

Divide and transfer the banana bread batter to your prepared bread pans. Place the banana bread batter into the oven and bake for approximately 45-60 minutes or until the bread is fully baked. I use a simple toothpick test to determine if the bread is fully baked. Whereas, every oven is different, adjust the cooking times as needed. If the bread is browning too fast, simple tent the loaf with some aluminum foil and finish cooking.
