Pasta Salad with Potatoes and Fresh Pesto

Delicious and refreshing, this amazing pasta salad with potatoes and fresh pesto is a summertime dream dinner. This salad even makes for delicious leftovers!

Ingredients

3 cups packed basil (leaves only)
1/3 cup walnuts
1/3 cup shredded parmesan cheese
1/3 cup extra virgin olive (more or less)
1 tsp salt
1 tsp black pepper
1 package (1 lb pkg) rotini pasta
1 package Klondike Gourmet Potatoes

Instructions

To make the pesto, add the basil leaves, walnuts shredded parmesan cheese, extra virgin olive and salt to the bowl of your food processor. Pulse to combine everything together. If needed, add more extra virgin olive oil to the desired consistency you want. Adjust salt and pepper as needed.

Place a large pot of water on the stove and place the Klondike Gourmet Medley potatoes into the pot. Bring to a boil and add the rotini pasta. Cook the pasta according to the directions on the package.

Drain the pasta and potatoes and check the potatoes for doneness. If they aren’t quite fork tender, place the potatoes on a plate and microwave for a couple of minutes until they are fork tender.

Remove the cooked potatoes and rinse in cold water to cool off completely along with the cooked pasta.

Once the pasta and potatoes are cooled, place them in a large bowl along with the freshly made pesto. If needed, cut the potatoes so they are more bite size. Adjust salt and pepper if needed, serve and enjoy!
