Fish Sandwiches with Fresh Tater Sauce

Ingredients

4 cod fillets (about 6 oz each)
1 tbsps Old Bay Seasoning
3 eggs
2 cups self-rising flour
3 cups panko bread crumbs
Bread of choice
4 slices of red onion
4 slices of American cheese
Black pepper to taste
Oil for frying
For the Tangy Fresh Tater Sauce: 1/3 cup chopped dill pickle
2 tbsp sweet pickle relish
1/4 cup chopped onion
1 tbsp dried dill
1 tbsp season salt or to taste
1 tbsp soy sauce
1 cup mayonnaise
Black pepper to taste

Instructions

Preheat your fryer or a large, heavy-bottomed pot with oil to 375°F (190°C).

Rinse the cod fillets and pat dry with paper towels. Season with Old Bay seasoning and black pepper on both sides.

In a shallow dish, beat the eggs until well combined.

In another shallow dish, add the self-rising flour.

In a third shallow dish, add the panko bread crumbs.

Dip each cod fillet in the egg mixture, then dredge in the flour, shaking off any excess. Dip again in the egg mixture, then coat with the panko bread crumbs, pressing the crumbs onto the fillets to adhere.

Place the breaded fillets into the hot oil and fry until golden brown, about 2 to 3 minutes per side. Remove the fillets from the oil with a slotted spoon and place them on a paper towel-lined plate to drain.

To make the Tangy Fresh Tater Sauce, combine the chopped dill pickle, sweet pickle relish, chopped onion, dried dill, season salt, soy sauce, mayonnaise, and black pepper in a bowl. Mix well to combine.

Toast the bread of your choice and assemble the sandwiches by placing a fillet on the bottom slice of bread, followed by a slice of American cheese, a slice of red onion, and a dollop of the Tangy Fresh Tater Sauce. Add the top slice of bread and serve hot.
