Classic Fish and Chips

Classic Fish and Chips

I love a good serving of fish and chips. My secret is crushed up salt and vinegar chips in the fish batter itself. Give them a try and I’ll bet you’ll love it.

Ingredients

2 cups self rising flour
1 tsp baking powder
1/4 cup rice flour, plus additional for dusting
2 cups finely crushed salt and vinegar chips
2 tsp season salt
1 cup lager beer (approximately)
4-5 russet potatoes
8-10 cod fillets, (4-6 oz each)
Vegetable oil for frying

Instructions

In a large bowl whisk together the self rising flour, baking powder, rice flour, finely crushed salt and vinegar chips and season salt.

Mix the lager beer into the flour mixture to create your fish batter. The batter should almost look like a medium thick pancake batter.

Peel and cut the potatoes into french fries and deep fry until golden brown. Remove from the fryer and season to taste with season salt.

Pat the code fillets dry with paper towels and sprinkle with rice flour to lightly coat them.

Dip the fillets in the batter and fry for about 4-5 minutes or until they are golden brown. the oil should be about 350 degree’s.

Serve the freshly fried fish with your french fries and enjoy. If you don’t want to make french fries, simply serve with your favorite potato chips on the side.
