Sweet and Sour Chicken Stir Fry

Sweet and Sour Chicken Stir Fry

Sweet and sour chicken is a favorite of mine and this recipe is easy and delicious to make!

Ingredients

4 boneless skinless chicken thighs
1/3 cup water
2/3 cup white vinegar
1 tbsp cornstarch
1/2 cup packed brown sugar
1/3 cup prepared ketchup
2 tbsp soy sauce
1 tbsp freshly grated ginger
4 cups stir fry vegetables
1/2 cup chopped onion
3 garlic cloves, minced
6 cups cooked rice
olive oil

Instructions

Thoroughly cook the chicken thighs in the oven or grill until they are fully cooked through.

Cook the rice according to the package directions.

To make the sauce, add the water, white vinegar, cornstarch, packed brown sugar, ketchup, soy sauce and freshly grated ginger to a sauce pan and whisk everything together to combine and incorporate the cornstarch.

Bring the sweet and sour sauce to a boil while stirring, reduce heat and simmer for 3-5 minutes. Remove from the heat and set aside until ready to use.

Heat a large sauté pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Chop the cooked chicken thighs into bite size pieces and sauté with the chopped onions and minced for about 3 minutes.

Add the stir fry vegetable mix and saute for another 5 minutes.

Pour the prepared sweet and sour sauce into the stir fry and carefully fold everything together to coat.

Serve with rice and enjoy!
