Ingredients

2 pounds Golden Potatoes cut into 1-inch cubes
12 hard boiled Oakdell eggs, peeled and chopped
3/4 cup mayonnaise
2 tablespoons yellow mustard
2 tbsp soy sauce
1 tablespoon rice vinegar
1/2 cup finely chopped celery
1/4 cup finely chopped onion
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives or green onions
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste

Instructions

Place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are tender when pierced with a fork, about 10-15 minutes.

Drain the cooked potatoes and transfer them to a large bowl along with the chopped hard boiled eggs.

In a separate small bowl, mix together the mayonnaise, mustard, soy sauce, rice vinegar, salt, and black pepper until well combined.

Pour the dressing mixture over the cooked potatoes. Add the chopped celery, onion, parsley, and chives/green onions to the bowl. Gently toss everything together until the potatoes are evenly coated with the dressing and the ingredients are well distributed.

Taste and adjust the seasoning if needed by adding more salt and pepper.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
