Deviled Eggs with Smoked Paprika

Deviled Eggs with Smoked Paprika

Deviled eggs are a great idea for lunch. Whip up a batch and serve them with my delicious egg and ham sandwiches.

Ingredients

6 hard boiled eggs
2 tbsp minced dill or sweet pickles
1 tsp smoked paprika
1 tbsp finely chopped parmesan cheese
1 tsp ground mustard
1 tbsp each chopped parsley, chopped chives
1/4 cup mayonnaise
Salt and pepper to taste

Instructions

Hard boil your eggs. I used my recipe for hard boiling eggs found in my cookbook, The Everyday Instant Pot Cookbook.

Cool the hard boiled eggs under cold running water. Once cooled, peel, slice in half lengthwise placing the egg yolks in a small mixing bowl and set the egg white halves aside to fill later..

To the bowl with the egg yolks, add the minced pickles (dill or sweet), smoked paprika, finely chopped parmesan cheese, ground mustard, chopped parsley, chopped chives and mayonnaise.

Mix everything together until combined.

Divide the yolk mixture between the egg white halves. Sprinkle with freshly chopped chives and paprika. Enjoy!
